Yummy Snack Mix Recipes

Here are some snack mixes to put out for the kids home from school, husbands that are on vacation (like mine), or for those summer gatherings with family and friends.
Quick Snack Mix
2 cups oat cereal round
1 cup peanuts
1 cup raisin
1/2 cup jelly bean gum drops or candy-coated chocolate pieces
In a medium bowl, mix cereal, peanuts, raisins and candy with a wooden spoon.
Store in a jar or a plastic container with a tight lid.
Ranch Snack Mix
6 cups freshly popped corn
3/4 cup brown sugar packed
1/3 cup light corn syrup
1/2 teaspoon salt
2 tablespoons butter or margarine
1/2 cup butterscotch chips or chocolate chips
3/4 teaspoon vanilla extract
Preheat oven to 250°. Spread popped corn in a 13 x 9 x 2-inch baking pan; set aside.
In a 1-quart saucepan, stir brown sugar, corn syrup and salt until blended. Add butter or margarine. Stirring over low heat, bring to a boil. Increase heat to medium. Without stirring, cook for 5 minutes. Remove from heat.
Stir in chips and vanilla. Pour over popped corn, stirring to coat. Bake for 1 hour, stirring several times. Spread mixture on waxed paper to cool. Store in an airtight container in a cool place.
Crunchy Munchies
1/2 cup butter or margarine
2 tablespoons soy sauce
1/2 teaspoon onion powder
1/2 teaspoon lemon pepper seasoning
1/4 teaspoon garlic powder
2 cups chow mein noodles
2 cups bite-size crispy corn cereal squares
2 cups oat cereal round
1 cup peanuts unsalted (optional)
In a large skillet over low heat, melt butter. Stir in soy sauce, onion powder, lemon pepper, and garlic powder until well blended.
Add noodles, corn and oat cereals, and peanuts if desired. Stir over low heat 2 to 3 minutes until moisture is absorbed. Cool on paper towels.
Store in an airtight container or in a reclosable plastic bag until ready to serve.
